Use leftovers
Using leftovers is an excellent way to reduce food waste, save money and boost sustainability. In the UK, it is estimated that around 9.5 million tonnes of food waste is created each year, with 70% of it being suitable for human consumption. This equates to £19.3 billion worth of food being wasted annually in the UK, which is equivalent to £700 per household per year (source: WRAP).
Here are some examples of what you can do with different types of leftovers:
- Bones: When you have leftover bones from a roast chicken or turkey, you can use them to make a delicious and nutritious broth. You can add any vegetable scraps you have on hand, such as onion, carrot, and celery, along with some herbs and spices, and simmer everything together for a few hours. You can then use the broth as a base for soups, stews, and risottos.
- Scraps: If you have leftover vegetable scraps, such as onion skins, carrot tops, and celery leaves, you can use them to make a homemade vegetable stock. Simply simmer the scraps in water with some herbs for about an hour. You can then use the stock in soups, stews, and sauces.
- Meat: Leftover meat can be used in a variety of ways. You can shred it and use it in tacos or burritos, chop it up and use it in a stir-fry, or use it to make a sandwich or wrap. You can also use leftover meat to make a hearty soup or stew.
- Rice: Leftover rice can be used to make fried rice, which is a great way to use up any leftover vegetables or meat you have on hand. Simply sauté the rice with some oil, vegetables, and meat, and season with soy sauce and other spices.
- Bread: Leftover bread can be used to make croutons for salads or soups, or you can use it to make French toast or bread pudding.
